Once the senses are opened by familiar glasses of wine, guests begin a seven-course Vietnamese meal that unfolds slowly, layer by layer, with emotion and ease. Discover the Tasting Menu – a seven-course Vietnamese journey

The experience begins with sautéed baby clams with Vietnamese coriander and lemongrass, served alongside crisp sesame rice crackers. A lightly sparkling Italian Prosecco is poured as a welcoming gesture, refreshing the palate and lifting the brightness of lemongrass and herbs – a gentle invitation into the meal.

Next comes pomelo salad with dried and fresh prawns, cool and well-balanced. A French white wine accompanies the dish, clarifying the citrus notes of pomelo and enhancing the natural sweetness of the prawns, keeping the experience light and poised for what follows.

Three types of spring rolls – crab, Hanoi-style, and betel leaf beef – appear as a familiar rhythm of Vietnamese cuisine. Here, the wine does not compete, but quietly cleanses the palate, allowing each roll to retain its own crispness, aroma, and depth of flavor.

The journey deepens with stuffed squid in turmeric sauce. The chosen wine softens the gentle richness of the seafood, while rounding out the warmth of turmeric, allowing the dish to feel comforting without becoming heavy.

For the main course, sautéed duck breast with basil and peanuts is guided by a Carmen red wine from Chile. The wine highlights the aromatic basil, balances the richness of the duck, and keeps the dish smooth and restrained rather than overpowering.

This is followed by slow-cooked pork ribs, the most unhurried and full-bodied moment of the menu. The red wine pairing deepens the savoury notes of the meat, creating warmth and completeness without overwhelming the senses.

The meal closes with Mrs. Gigi banana cake served with coconut ice cream. At this point, the wine gently steps back, allowing the familiar, comforting sweetness of banana and coconut to linger – a soft, unmistakably Vietnamese ending.
