Maison 1929 collaborates with Teishoku 8 to bring the heart of Vietnamese cuisine to Taiwan

April 2026 marks a significant milestone in Maison 1929’s journey to promote the essence of Vietnamese gastronomy. We are thrilled to announce a special collaboration with Teishoku 8—the renowned restaurant chain in Taiwan—to launch a curated menu of three signature Vietnamese dishes across their 29 locations nationwide.

This exclusive menu is the result of a dedicated partnership. Chef Vincent Cao Minh Page, the founder of Maison 1929, personally shared his original recipes, which were then meticulously refined by Teishoku 8’s head chefs to harmonize with the Taiwanese palate. To ensure cultural authenticity, the flavors were tasted and endorsed by Nguyen Thu Hang, a prominent Vietnamese YouTuber in Taiwan known for her passion for connecting the two cultures.

The collaboration introduces three iconic dishes, thoughtfully adapted to preserve their Vietnamese soul while thriving in the heart of Taiwan.

Grilled Beef & Pork Rice Vermicelli

This dish carries the distinct signature of the famous Bún bò Nam Bộ (Southern-style beef noodles), accompanied by crispy Nem rán (Hanoi fried spring rolls). The combination of fresh herbs, a balanced sweet-and-sour dipping sauce, and smoky seared pork creates a vibrant symphony of flavors.

Vietnamese Sour Crab Vermicelli Soup

Inspired by the traditional Bún Riêu Cua (Crab Paste Vermicelli Soup), this dish highlights the natural, refreshing tartness of ripe tomatoes. The centrepiece is the melt-in-your-mouth catfish paired with silky Vietnamese rice noodles, offering an exciting explosion of taste.

Grilled Pork Knuckle Rice Vermicelli

This dish is a sophisticated evolution of the classic Vietnamese Thịt kho (Braised Pork). The pork trotter is slow-cooked until tender and succulent, then coated in an exclusive sauce and lightly torched to create a captivating smoky aroma that awakens the senses.

Sharing his thoughts on the project, Chef Vincent Cao Minh Page expressed his deep emotion: “As someone of French-Vietnamese heritage with a profound love for Vietnam’s culinary heritage, I truly hope that through these three dishes—which retain their Vietnamese soul while embracing subtle creative twists—Taiwanese diners will find joy in this cross-cultural tasting experience. For Vincent, cooking is more than a profession; it is a calling. Born and raised in Paris but nurtured by his mother’s traditional cooking, he chose to return to Vietnam to fulfill his dream of introducing the country’s flavors to the world.
